Vegetable Stock – Roasted

The recent veg stocks have been ok, but not great. Today I roasted the veg for 30 minutes before boiling stock and added big sprigs of thyme and rosemary. I also added a jalapeno seeded and a TB coriander seed to the usual ingredients. Now, we’re getting somewhere.

(2 onions, equal parts celery and carrot, 2 heads garlic sliced in half, seeded jalapeno, rosemary, thyme, 4 tsp salt, 1TB peppercorns, 1 TB coriander seed)
