Tofu Puree


Tofu Puree
  • 14 oz extra firm tofu
  • ¼ cup lemon juice
  • 1 large sprig basil
  • salt to taste
  • 1 TB olive oil
  1. Combine all ingredients in food processor. Whiz until smooth.

“Whiz until smooth” seems to be today’s theme song. Despite the stigma of “tofu” this is yet another delicious application. I wanted something like this to try inside a calzone. I’m also thinking it would be good simply spread on garlic toast. Maybe a dollop on top of a veg burger or risotto. Hmmmmm.
