Yet another pad thai. I minced (whizzed in the food processor) some extra broccoli and cauliflower, and added that along with the cabbage slaw. Tossed in some halved cherry tomatoes at the end. Yum. Now I’m out of pad thai sauce again. It doesn’t last long these days!

Pad Thai is a definite weekend quick lunch fave. This version included tofu and cabbage slaw as a sub for bean sprouts. I still had sauce from the last time I prepared a batch.
