Spinach Puttanesca Dough (pizza or bread sticks)

I wanted to try doing this two different ways to compare, and they both worked out great. These both include sun dried tomatoes in addition to the other typical puttanesca players. (puttanesca dough) The first time I used dry packed tomatoes, and the second time I used jar tomatoes in olive oil. Actually I was tricked by the packaging and came home with a jar of sun dried tomato pesto intended for bruschetta. No big deal. I think it’s still a fair comparison.

Spinach Puttanesca Dough w/ Sun Dried Tomatoes

Ingredients
  • ¾ cup warmed Very Veggie juice (or V8 or tomato juice)
  • 2 tsp yeast
  • 2 TB sugar or honey
  • ½ cup whole wheat flour
  • 2 cups white unbleached flour
  • 1 pkg chopped spinach, thawed and squeezed of excess water
  • ¼ – ½ cup chopped kalamata olives
  • 2 TB capers
  • 6 cloves garlic minced
  • ¼ cup chopped sun dried tomatoes (dry packed)
  • 1 tsp salt
  • 1 TB olive oil
Instructions
  1. Add juice, yeast, and sugar to mixing bowl. Stir to dissolve.
  2. Add all other ingredients. Mix and knead with dough hook for 5 minutes. Form into ball. Allow to rise for at least an hour.
  3. Makes 2 regular sized pizza doughs. (8 slices each)
  4. Can be pressed into pizza dough size, left without toppings, baked and then sliced into bread sticks.
