I made this today thinking it would be great served as bread sticks with tzatziki or maybe even formed into a bun for veg burgers. This is my favorite result for spinach dough so far. It turned out really light and spongy.
- 1 pkg chopped frozen spinach, thawed and squeezed of all liquid
- 2 tsp yeast
- 2 tsp honey
- 1 cup warm water
- 1 TB olive oil
- 1½ cups unbleached white flour
- 1 cup whole wheat or spelt flour
- Dump all ingredients into mixer. Mix and knead with dough hook for about 5 minutes. Form into ball and rub with oil. Cover and allow to rise for at least an hour. Divide in half for make 2 regular sized pizza doughs. Dough can be baked until slightly browned and sliced into bread sticks.
I like to divide the dough and freeze half, so I always have a spare for fast food needs.
Update: We used this as a sort of flat bread, naan substitute, for the veg burger… open faced felafel style with cucumbers, tomatoes, tzatziki, and a makeshift hummus made from leftover lima beans. To…die…for! The presentation was kinda sloppy and not exactly photo worthy, but it will definitely be remembered. 🙂Tags: bread sticks, dough, pizza, spinach
