Spinach Bread Sticks

This is what we had with the hummus. Another of countless things I’ve made forever but never really measured until now. Score.

Spinach Bread Sticks
  • 1 pkg chopped frozen spinach, thawed and squeezed of all liquid
  • 2 tsp yeast
  • 2 tsp brown sugar
  • 1 cup warm water
  • 1 TB olive oil
  • 2 cups unbleached white flour
  • ½ cup spelt flour
  • ½ cup quick oats
  1. Dump all ingredients into mixer. Mix and knead with dough hook for about 5 minutes. Form into ball and rub with oil. Cover and allow to rise for at least an hour. This will make 2 regular sized pizza doughs.
  2. For bread sticks: Pre heat oven and pizza stone to highest possible temperature. (usually 550) Roll or stretch one dough. Bake approximately 5 minutes until starting to brown.

We had leftovers from last night, so the little dude will probably take care of that. Plus we still have one entire dough to freeze for another time.
