Roasted Root Vegetables

I made enough for leftovers because this type thing is so delicious leftover. Couple potatoes, carrots, parsnips along with rosemary, thyme, one onion and a whole head of garlic (whole cloves peeled). Add about a cup of veg stock and a splash of lemon juice. Salt & pepper. Roast for about an hour at 425. Easy and tasty.
