Roasted Garlic Parmesan Pizza Sauce

  • 2 cans diced tomatoes
  • 12 cloves roasted garlic
  • 1 small can tomato paste
  • 1 tsp salt
  • 1 tsp herbs de provence
  • 1 TB olive oil
  • ~ 3 inch parmesan rind
  • big spash red wine
  1. Whiz tomatoes, garlic, salt, herbs, paste, oil in food processor. Add to pot and stir in wine. Add parmesan rind. Bring to bubble on stove. Low simmer or drop in oven at 300 without lid for at least 2 hours until reduced and has a caramelized appearance.

Ok. I will admit I did not add paste this time because there was none in the pantry. This is one of many things that tastes totally different after the entire cooking time, so try to withhold judgment and extra spice. I usually add paste to this type sauce, but it was actually perfectly tasty without it. Just another of MANY versions to come.
