Quick Tomato Soup Dinner

We make soooo many versions of tomato soup, but this one was a quickie. It was a hearty version that included a mirepoix (celery/onion/carrot). Unfortunately my BLT was a bust due to the fact that I was distracted and only cooked the bacon to chewy rather than crispy. Curses! But… the soup was delicious.

Quick Tomato Soup Dinner

Ingredients
  • 2 cans diced tomatoes
  • 1 small can tomato paste
  • ½ onion
  • 1-2 stalks celery
  • 2 small carrots
  • 4 cloves garlic minced
  • 1 TB herbs de provence
  • 1 TB butter or oil
  • 2 cups chicken or vegetable stock
  • salt & pepper
Instructions
  1. Whiz vegetables in the food processor until minced. Heat oil in pot. Add vegetables. Whiz tomatoes in food processor. Add tomatoes to pot along with paste and stock. Add herbs and seasoning. Simmer and serve.

Fire roasted tomatoes were tasty in this dish. I use the food processor for mirepoix when I want a less chunky texture.
