Peanut Butter Cookies

Haircut day means baking cookies for the little guy’s “stylist”. I really only ever tried making the 1 cup each sugar/peanut butter plus egg version from childhood. Maybe I tried once or twice through the years with a random recipe, but those were dry and crumbly.
I wanted to use my standard dough as a base and hopefully get something tasty. I’m always trying to think of new flavors, but this mainstream fave turned out great! Will add it to my list.

Peanut Butter Cookies
  • 1 stick unsalted butter
  • ½ cup white sugar
  • ½ cup brown sugar
  • 1 egg
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 2 tsp vanilla
  • ½ cup quick oats
  • 1¼ cup flour
  • 2 TB smooth natural peanut butter
  • 1 - 12 oz bag peanut butter chips
  1. Preheat oven to 365.

I think the reason these worked was the very small amount of peanut butter in the actual dough. Peanut butter, especially the “natural” varieties can be very drying. The chips were a nice way to pack in lots of flavor and maintain some moisture.

*Although these were a good texture I think I’ll add even less PB to the actual dough next time.
