Super Bowl food with mashed black beans, guacamole (if the avocados are nice!), and homemade salsa with Way Better chips.
The mushroom stew will be a veg version of beef stew.
Black eyed pea salad is a dish I like in the summer. This will be a warm version with quinoa added.
I’m in love with roasted cauliflower and wild rice right now, so throw them together and I can’t lose.
The risotto will probably have butternut squash or zucchini.
Dizzle voted for a thai dish, so we’ll do something with a mixture of vegetables and either sticky brown rice or pad thai noodles.
