Lunch – Vegetable Stir Fry

Super simple and definitely tasty with lots of veg packed into one meal. I cheated (?) and used a bag of fresh “stir fry” vegetables that included broccoli, broccoli slaw, and snow peas. I make my own stir fry sauce, so that will be coming soon.

Cost: ~ $2.75 including 2 servings of sushi rice

Vegetable Stir Fry

Ingredients
  • 12 oz bag stir fry vegetables
  • 1 cup cabbage slaw
  • 1 TB vegetable oil
  • 1 tsp sesame oil
  • ½ cup stir fry sauce
  • 1 tsp corn starch, dissolved in a small amount (~2TB) of cold water
Instructions
  1. Heat wok or pan to medium high. Add oil. Add all vegetables and stir fry for approximately 5 minutes. Add stir fry sauce and stir to incorporate. Gradually add corn starch mixture while stirring constantly until desired consistency.

I paused when I looked at the vegetable bag because it stated that it was 4 servings. I thought if we ate the whole thing we were being gluttonous! That was before I noticed that each serving was only 25 calories, and I knew we were not adding meat. So, now I feel much better. 🙂
