Kid Food – Lemon Lentil Soup

I tried. We were right around the corner from Sticky Fingerz Rock ‘n Roll Chicken Shack. I was starving. Chicken fingers sounded like an easy option. I gave the little dude options: 1)chicken at the shack 2)tortillas and beans at a Mexican restaurant 3)bread and soup at a bakery. Once he heard “bread and soup” he was adamant about his decision. It was actually a great choice and very delicious. I had a hummus sandwich, and my sidekick had lentil soup and bread. He was so enamored I decided to try and recreate it at home. I love the look, and taste, of the lemon slices in the soup.

Lemon Lentil Soup
  • 1 cup green lentils
  • 4 cups vegetable broth
  • 2 carrots diced
  • 2 celery stalks diced
  • ½ lemon sliced thin
  • 1 TB ground coriander
  • ½ cup lemon juice
  • salt & pepper to taste
  1. Heat pot. Add carrots and celery. Add a small amount of the broth to saute the vegetables. Add lentils, remaining broth, lemon slices, and coriander. Bring to bubble. Reduce heat to low. Simmer for approximately 45 minutes. Add lemon juice and salt/pepper to taste.
  2. Serve with bread :).
