Butternut squash with kale and baguette

Creamy Butternut Squash w/ Kale
Serves: 4
  • 2 cups cubed butternut squash
  • 1 cup coconut milk
  • 2-3 handfuls chopped kale
  • salt, pepper, and nutmeg to taste
  1. Add coconut milk, butternut squash, and spices to a pot. Bring to bubble. Reduce heat, cover and cook for approximately 20-30 minutes until desired tenderness. Add kale. Toss with squash. Cover and cook until wilted, approximately 5 minutes. (This can be done in multiple batches if all kale won't fit in the pot at first.)
