Kale Mushroom Gratin

This is a tasty go-to when I’m feeling lazy or uninspired. So good.

Kale Mushroom Gratin
  • 8 oz mushrooms sliced
  • 1 onion diced
  • 4 scallions sliced
  • ½ cup wild rice, prepared
  • 1 cup fresh shredded parmesan
  • 1 cup bread crumbs
  • 4 big handfuls chopped kale
  • 1 cup vegetable stock
  1. Heat pan. Add onions and mushrooms. Cook on medium for about 20 minutes, adding small amounts of stock to prevent sticking. Add kale. Cover and simmer until wilted, stirring periodically. Add rice. Stir to combine. Add mixture to baking dish. Add stock to dish. Cover with bread crumbs and parmesan. Bake at 375 for approximately 40 minutes.

This could easily be 4 servings. We have it as a main course, so for us it is 2 large dinner portions plus leftovers for 1-2 the next day.
