Kalamata Spinach Calzones

It’s tough for me to come up with interesting ingredients for calzones. The last attempt was tasty enough but bland by my standards. The mushrooms and spinach just weren’t the best buddies for a calzone. I like something a little more flavorful. This attempt with olives and spinach was sooooooo good. It will be repeated for sure. The briney salty olives were just the right friend for spinach. Not to mention the addition of roasted garlic in the tofu puree. YUM. Now we’re getting somewhere.

Rosemary Dough

Ingredients
  • ½ cup warm water
  • 1 tsp yeast
  • 1 tsp honey
  • ½ cup spelt flour
  • ¾ cup white unbleached flour
  • 1 tsp oil
  • ½ tsp salt
  • 1 sprig rosemary
Instructions
  1. Add water, yeast, and honey to the mixing bowl. Stir to dissolve. Add all other ingredients. Mix and knead with dough hook for 5 minutes. Cover with towel and allow to rise for an hour. Divide into 3-4 pieces for calzones.

Roasted Garlic Tofu Puree

Ingredients
  • 1 head garlic
  • 1 pkg extra firm tofu
  • 2 TB oil
  • salt & pepper
  • 2 TB lemon juice
Instructions
  1. Preheat oven to 350. Divide garlic into cloves. Do not peel. Add cloves to a pot or pan. Cover. Bake for 35 minutes. Allow to cool. Peel cloves and add to food processor. Add all other ingredients. Whiz until smooth.
  2. *This is enough for probably 6 calzones.

Simple Marinara

Ingredients
  • 1 large can tomatoes
  • 1 tsp salt
  • 2 sprigs basil
Instructions
  1. Whiz until smooth. Simmer uncovered until thick.
  2. *This can also be dropped in a low oven for simmering, 275-285 degrees.

Kalamata Spinach Calzones

Ingredients
  • ½ cup kalamata olives
  • 3 handfuls spinach
  • 2 portions dough
  • 2 portions tofu puree
Instructions
  1. Preheat oven and pizza stone to highest temperature.
  2. Heat pan to medium. Add spinach. Briefly toss until slightly wilted.
  3. Roll and stretch each dough portion.
  4. Spread ~3TB tofu puree on one half. Add ½ olives and ½ spinach to each dough portion. Fold over. Crimp edges.
  5. Place calzones on pizza stone. Make a couple slits in each one.
  6. Bake for approximately 10+ minutes until calzones are dark golden brown.
  7. Serve with marinara dipping sauce.
