Hummus Pita “Sandwich”

I had an amazing hummus sandwich at a bakery this week. The only problem was the bread quickly got really soggy. Other than that the mix of flavors was amazing. This is my exact replica with one exception. We made a dense whole grain dough and made that into little naan/pita sized individual servings. Instead of a sandwich I chose to create an open faced pile of goodness.

Hummus Pita "Sandwich"
  • pita bread (recipe below)
  • hummus (basil hummus)
  • cherry tomatoes sliced
  • kalamata olives
  • avocado sliced
  • mixed baby greens
  1. Layer hummus, greens, avocado, then tomatoes and kalamatas on top of whole grain pita bread.

Dough for whole grain "pita"
Serves: 12
  • 2 tsp yeast
  • 2 TB honey
  • 1 cup warm water
  • 1¼ cup white unbleached flour
  • ⅓ cup wheat bran
  • ⅓ cup flax meal
  • ⅓ cup oatmeal
  • ⅓ cup seeds
  • ½ cup whole wheat flour
  • 1 tsp salt
  1. Add yeast, honey, and warm water to mixing bowl. Mix gently to combine.
  2. Add all other ingredients. Mix and knead for 5 minutes.
  3. Allow to rise for at least an hour.
  4. For pita sized doughs cut into 12 equal pieces. These can be stored or used immediately
  5. Roll thin.
  6. Preheat oven and pizza stone to highest temp, usually 550. Add dough to stone. Bake for approximately 2 minutes until lightly browned on bottom and edge.
