This idea came from my 2 year old assistant. Given the choice between sugar and honey, he chose honey. Then he insisted on adding spelt, because it’s fun to say spelt. This dough has a wonderful texture, soft and stretchy. Although you can totally use whole wheat flour, spelt flour has a finer texture than most whole wheat flours and a milder flavor. We will definitely make this version again.
Honey Spelt Pizza Dough

Ingredients
- 2 cups unbleached white flour (couple tablespoons extra if your dough is too sticky)
- ½ cup spelt flour
- 1 cup warm water
- 1 T honey
- 1 TB olive oil
- 2 tsp yeast
- 2 tsp salt
Instructions
- Add water, yeast, and honey to mixing bowl. Mix to dissolve honey. Add oil, flours and salt. Use dough hook to mix and knead for 5-10 minutes. Form dough into a ball. Spray or rub with oil. Cover with damp towel or plastic wrap. Allow to rise for at least an hour. This makes 2 regular sized pizza doughs.
