Everyone devoured yesterday’s french bread with beans last night and then lunch today. Gumbo tonight, so that means more french bread please! The Louisiana folks in the house and all this french bread is also making me think of po-boys. Hmmmmmm.
- 2¾ cups unbleached white flour
- 2 tsp yeast
- 1 cup warm water
- 2 tsp salt
- 2 TB sugar
- 1 TB olive oil
- Add water, sugar, and yeast to mixing bowl to dissolve. Add olive oil, salt, and flour to mixing bowl. Mix and knead with dough hook for about 5 minutes. Cover bowl with plastic wrap or damp towel. Leave in warm place to rise about 1½ hours. Sprinkle flour on counter or board. Divide dough in half and form into 2 baguettes. Brush or spray tops with oil. Allow to rise in the pan until almost doubled, about 20 minutes. (make several slits in the tops with a sharp knife) Bake at 450 for 10 minutes. Reduce heat to 400 and bake 10 more minutes.
