I was out of butter today (what?! first….time….ever), so I substituted olive oil. It worked like a charm!

Ingredients
  • 1¾ cup warm water
  • 2 TB brown sugar
  • 2 tsp yeast
  • ½ cup quick oats
  • ½ cup flax meal
  • ½ cup whole wheat flour
  • ⅓ cup spelt flour
  • ⅓ cup soy flour
  • ⅓ cup wheat bran
  • ½ cup (heaping) mix of seeds: sunflower, sesame, pepitas, flax
  • 1 TB chia seeds
  • 1¾ cup unbleached white flour
  • 2 tsp salt
  • 1 TB olive oil
Instructions
  1. Add water, sugar, and yeast to mixing bowl. Mix to dissolve. Add all other ingredients, except olive oil, to mixing bowl. Mix on low with dough hook until flour is incorporated. Add olive oil. Mix and knead with dough hook for 5 minutes. Cover with towel or plastic wrap and allow to rise until doubled, approximately 1 hour. Dump dough into bread pan. Cover with plastic wrap and allow to rise until dough is slightly above the top of the pan, approximately 30-60 minutes. Bake at 450 for 10 minutes. Reduce heat to 350 and bake another 35 minutes.
