Everything Bread


This is today’s everything bread. I am officially accepting the fact that this is how the bread is going to be. I don’t need a tall rounded loaf. The extra accidental rise that was achieved last time was for naught. Once we cut a few slices the top portion of the bread was actually too thin and crumbly. So, this is good. The bread is delicious, and I can stop obsessing over trying to achieve some sort of Wonder Bread appearance. 🙂

Today’s version includes rosemary. I used honey for the “sugar”. I adjusted the whole wheat flour slightly. The other usual ingredients include… unbleached white flour, oats, flax meal, spelt flour, wheat bran, soy flour, sunflower seeds, pepitas, sesame seeds, flax seeds, chia seeds, yeast, salt, water, and a tiny bit of butter.
