Veg Burger Cookies

Ingredients
  • 2 TB ground chia seed
  • ½ cup warm water
  • 1 cup oatmeal
  • 1½ cup fresh bread crumbs
  • ½ cup seeds (sesame, pepitas, and/or sunflower)
  • 1 onion minced
  • 2 carrots minced
  • 2 cups cooked beans
  • ½ bunch cilantro
  • couple handfuls baby spinach, approximately 2 oz
  • 1 TB olive oil
  • 1 TB soy sauce
  • 1 tsp chili powder
  • 1 tsp coriander
  • 1 tsp cumin
  • 1 tsp garam masala
  • salt and pepper to taste
Instructions
  1. Mix chia and water. Set aside.
  2. Using a food processor, whiz oatmeal into a flour. Add to mixing bowl.
  3. Whiz onion and carrot until minced. Add to mixing bowl.
  4. Whiz cilantro and spinach until chopped. Add to mixing bowl.
  5. Mash 1½ cups beans, leaving the other ½ cup whole. Add to mixing bowl.
  6. Add all other ingredients. Mix and fold until well incorporated.
  7. Divide into approximate 1-oz portions using a cookie scoop or tablespoon (gently flatten with oiled or wet hands).
  8. Heat non-stick pan to medium. Optional: Spray with oil.
  9. Cook approximately 5 minutes on each side until golden brown.
