Dough for whole grain "pita"

Ingredients
  • 2 tsp yeast
  • 2 TB honey
  • 1 cup warm water
  • 1¼ cup white unbleached flour
  • ⅓ cup wheat bran
  • ⅓ cup flax meal
  • ⅓ cup oatmeal
  • ⅓ cup seeds
  • ½ cup whole wheat flour
  • 1 tsp salt
Instructions
  1. Add yeast, honey, and warm water to mixing bowl. Mix gently to combine.
  2. Add all other ingredients. Mix and knead for 5 minutes.
  3. Allow to rise for at least an hour.
  4. For pita sized doughs cut into 12 equal pieces. These can be stored or used immediately
  5. Roll thin.
  6. Preheat oven and pizza stone to highest temp, usually 550. Add dough to stone. Bake for approximately 2 minutes until lightly browned on bottom and edge.
