Dinner Rush & Tofu Cream


For various reasons including 5 stitches in my hand… we were behind on dinner plans. Dizzle did a great job throwing together this bowl of tasty goodness. Black beans, corn, red peppers, red onion, jalepenos, tomatoes, topped with tofu cream. (What?!)

Tofu Cream
  • 12 oz extra firm tofu
  • 4 TB lemon juice
  • 2 TB apple cider vinegar
  • 1TB olive oil
  • salt to taste
  1. Puree in food processor until smooth. Adjust acid and salt to taste.

I saw the idea for tofu cream and had to try it. I was intrigued while having SERIOUS doubts and very low expectations. I used at least double the acid of recipes I read, so maybe I’m weird or something. Anyway…delicious. I’ve already made 3 versions: plain, dill, and cilantro lime.
