When Dizzle is away I crave comfort food, and for me that means things like creamy risotto, pizza, or these roasted potato nachos.
Roasted Potato Nachos
- 1 potato, sliced into bite sized pieces
- 2 slices bacon, cut into matchsticks
- 1-2 oz cheddar cheese
- Preheat oven to 425. Toss potatoes with a little olive oil and salt. Roast on pan in oven for 30-45 minutes until lightly golden. Fry bacon and drain. Toss potatoes with bacon. Add grated cheese and cook covered until cheese melted. Top with scallions, jalepenos, and sriracha.
