This menu actually started on Monday, so I’m way behind. We’ve already had drunken noodles, thai chili basil eggplant, and summer rolls. Tonight we’ll have laksa. It’s been quite a while since we’ve had that one. Dizzle asked for lots of noodles and Thai this week, so laksa came to mind. It’s one of the […]
The pasta is a mix of whole grain rotini along with tri-colored fusili. One serving of that was cooked and drained. I threw a handful of broccoli florets into a pan and added the pasta with 1/2 cup cooked white beans (great northern). Turned the heat on high just to get it going. Splashed in […]
It was on my list to create a veg burger recipe that was nut-free. No problem. No brainer really…I simply omitted them. Genius. I did tinker with the rest of the recipe for yet another version. The school is serving turkey spinach burgers today, so that gave me the idea of adding spinach to our […]
This week I’m being ambitious, preparing a different meal every day that is similar to what is being served at school. Not sure how long this will last. I’d much rather just have a couple things that we rotate through the week. We’ll see how it goes. 🙂
I totally forgot to take a photo of today’s lunch, so this is an old one. Today’s version included whole grain rotini, red and yellow grape tomatoes, tofu, olives, and cucumbers.
Mujadara was part of school lunch yesterday. The little guy loves cinnamon, and he likes that daddy sometimes takes this dish on trips for airport food. It’s an easy recipe that can be adjusted with all different spices. I’ve also done a black bean version. Print Mujadara Recipe Author: Next Good Meal Serves: 4 Ingredients ½ […]
I love adding savory flavors to the standard dough recipe. This tomato dough was so tasty. (I’ve done other versions using tomato juice, salsa, or even bloody mary mix.) The recipe makes the equivalent of 2 baguettes or 2 pizzas. I used one portion to make bread sticks. We devoured these with hummus, and the […]
This was only the fourth day of school, so we’re having fun playing around with different school lunches. This one included mujadara, tomato bread sticks, and carrots. (Mujadara is basic rice, lentils, caramelized onions, and spices like cinnamon.) Cost of the entire lunch: $0.65 Updated recipes tomorrow!
We’re new to this school thing. We are also new to being somewhere on time before about 9 am. Luckily the little one has always been early to bed and early to rise. The arrival of school brought no angst about waking early. It did mean a set amount of time to get everything done […]
I need to do yet another post for veg burgers now that I’ve got a good mojo for that recipe now. I made 2 batches last week because the 4 yr old is really digging those lately, made into cookie sized patties. He eats them with no bun, dipped in ketchup or mustard. The recent […]
