Today’s School Lunch

This was only the fourth day of school, so we’re having fun playing around with different school lunches. This one included mujadara, tomato bread sticks, and carrots. (Mujadara is basic rice, lentils, caramelized onions, and spices like cinnamon.) Cost of the entire lunch: $0.65 Updated recipes tomorrow!

Quick Lunch Stir Fry

This was thrown together using the last of the veggies from the spring roll container…squash, peppers, carrots…along with tofu, some leftover asparagus, and peanuts. Sauce was a mix of soy sauce and rice wine vinegar. Threw some black sesame seeds on at the end and served with whole grain rice. Yum

Summer Rolls

My absolute favorite lunch lately is still summer rolls. (I was calling them spring rolls, but I noticed sometimes these are called summer rolls when not cooked. Whatever.) Dizzle turned me on to these, and I can’t get enough! There is a decent amount of prep work, but I’ve gotten in the habit of doing […]

Quick Lunch

Great smeared in a wrap or simply served as a dip with bread or chips. Print Black Bean Hummus Author: Next Good Meal Serves: 8   Ingredients 3 cups black […]

Tomato Peach Soup

Argh… It just occurred to me that this photo looks like rotel dip. Photo fail, but flavor success. 🙂 I’m hoping for a better illustration when it’s actually served! The little one is in love with peaches at the moment. I couldn’t resist a recipe for chilled tomato soup from this month’s Bon Appetit as […]

Menu Board

This was our light load from the market today. We still had lots of provisions from Saturday’s trip. The 2-almost 3 yr old assistant “helped” me with the menu board before I could get a clean photo. 🙂 I’m into hummus lately. I really like it in wraps for lunch. I made red pepper curry […]
