Brown Cookies

The little dude was absolutely convinced we would make cookies today. He had a great day of mostly hiding the “terrible” side of his two-ness, so I obliged. He really wanted “brown cookies”. I knew this meant our traditional house recipe double chocolate, but we had no eggs or butter in the house. Challenge!  Long story short, we really just dumped a few things in the mixer and hoped for the best!

Brown Cookies
Serves: 24
  • 1¼ cups quick oats
  • ½ cup maple syrup
  • ½ cup peanut butter (natural creamy)
  • 1 tsp vanilla
  • ¼ cup cocoa powder
  • ½ cup chocolate chips
  1. Combine all ingredients with a mixer. Drop tablespoon balls onto a cookie sheet. (Cookie scoop is perfect.) Bake at 350 for 8 minutes.

I started with only 1 cup oatmeal, but I had to add more to the mixer at the end to achieve something cookie-like.

The 2yo cookie monster thoroughly enjoyed these, so I considered it a success. Then I tasted one, and I’m hooked!
