The little dude and I share a love of pizza for breakfast. We haven’t done it in a long while. I threw this together recently when Dizzle was out of town, and it has stuck as a once or twice a week treat. I use the tofu fresh out of the package, drained but not pressed or prepared in any way. This leaves it with a yummy eggy texture perfect for breakfast pizza. With this particular one I mashed a small portion of the tofu to smear directly on the crust under the sauce. Any dough and any sauce will do. I even used a plain can of tomato puree once. I like it best with a hearty roasted style sauce with plenty of garlic and herbs.
