We are hooked on 10 grain cereal for breakfast, but road trips require something more portable. Burritos!

- 1 potato diced
- 1 red pepper diced
- 1 onion diced
- 1 cup black beans, cooked and drained
- 1 TB olive oil
- 2 TB lime juice
- 1 tsp chili powder
- salt and pepper to taste
- 4 whole wheat tortillas
- Using a microwave safe bowl, cover potatoes with water by 2 inches. Heat in microwave for 6-8 minutes. Drain.
- Heat oil in pan. Add onion. Cook for a couple minutes. Add potatoes. Cook and stir gently until potatoes begin to lightly brown. Add all other ingredients. Cook an additional few minutes.
- Divide mixture among 4 tortillas. Fold into burritos. Heat pan to medium low. Cook for a couple minutes on each side.
