We are hooked on 10 grain cereal for breakfast, but road trips require something more portable. Burritos!

Breakfast Burritos
Serves: 4
  • 1 potato diced
  • 1 red pepper diced
  • 1 onion diced
  • 1 cup black beans, cooked and drained
  • 1 TB olive oil
  • 2 TB lime juice
  • 1 tsp chili powder
  • salt and pepper to taste
  • 4 whole wheat tortillas
  1. Using a microwave safe bowl, cover potatoes with water by 2 inches. Heat in microwave for 6-8 minutes. Drain.
  2. Heat oil in pan. Add onion. Cook for a couple minutes. Add potatoes. Cook and stir gently until potatoes begin to lightly brown. Add all other ingredients. Cook an additional few minutes.
  3. Divide mixture among 4 tortillas. Fold into burritos. Heat pan to medium low. Cook for a couple minutes on each side.
