It was a rainy day yesterday, so I had a bread making party with my little sous chef. Choices were spinach and tomato.

Spinach French Bread

Serves: 8

Ingredients
  • 16 oz bag frozen chopped spinach
  • ½ cup oats
  • 1½ cup whole wheat or spelt flour
  • 1 cup white unbleached flour
  • ¾ cup warm water
  • 2 tsp yeast
  • 1 TB honey
  • 1 tsp salt
Instructions
  1. Microwave spinach for approximately 5 minutes. Squeeze liquid out once it is cooled. (Using hands or a kitchen towel.)
  2. Add water, yeast, and honey to mixing bowl. Stir to combine and dissolve. Add all other ingredients. Mix and knead on low for 5 minutes. Allow to rise for one hour. Form into 2 baguettes. Preheat oven to 450. Bake for 10 minutes. Reduce heat to 400 and bake another 10 minutes.
  3. This can also be formed into pizza doughs.

The oats don’t really add anything as related to the flour ratios here. It is just an addition for texture and something different. It could be omitted and the recipe should be just fine. If the dough is ever absolutely too sticky, add flour by 1 tablespoons. Knead thoroughly between each. The spinach dough is bulky with spinach, and it never really formed a pretty ball in the mixing bowl. It was easily formed into a ball by hand once removed from the mixing bowl.
