This was almost too easy to be so delicious.
Rice was prepared as directed with vegetable stock. Kale was tossed with the rice on low heat until wilted.
- 1 head cauliflower cut into florets and sliced
- optional: 1 onion
- optional: 6-8 cloves unpeeled garlic
- olive oil
- salt & pepper
- Preheat oven to 425. Toss cauliflower and optionals in a small amount of olive oil, salt, and pepper. Pour onto pan lined with parchment paper. Bake for approximately 30-45 minutes until lightly golden.
