Black Rice, Kale, and Roasted Cauliflower

This was almost too easy to be so delicious.
Rice was prepared as directed with vegetable stock. Kale was tossed with the rice on low heat until wilted.

  • 1 head cauliflower cut into florets and sliced
  • optional: 1 onion
  • optional: 6-8 cloves unpeeled garlic
  • olive oil
  • salt & pepper
  1. Preheat oven to 425. Toss cauliflower and optionals in a small amount of olive oil, salt, and pepper. Pour onto pan lined with parchment paper. Bake for approximately 30-45 minutes until lightly golden.

The serving size really just depends on the size of kale and whether it’s a side or main. This was a large head, so it resulted in 3 big servings.
