The avocados have been good lately, so any excuse for one of those is a winner in my book. I also really love these sprouted tortillas I found recently. They crisp up nicely for quesadillas and wraps. I used some of the tofu puree leftover from calzones along with roasted sweet potato and black beans. Sprinkled it all with a little chipotle and lime juice. Fold over. Cook for a couple minutes on each side in a medium hot pan. Oh so tasty.
