I love this combo of asparagus and roasted potatoes with pesto. I wanted to try a lighter pesto. Adding oil instead of water would definitely be tasty and have a richer consistency, but I really didn’t miss it this time.

- ½ cup roasted nuts
- ¼ cup water
- salt and pepper to taste

- Toss with pasta or roasted veg.
Any nuts will do. I happened to have a mix of pistachios, almonds, and cashews, so that’s what I used. Tags: basil, mint, pesto, plant based
