Basil Mint Pesto

I love this combo of asparagus and roasted potatoes with pesto. I wanted to try a lighter pesto. Adding oil instead of water would definitely be tasty and have a richer consistency, but I really didn’t miss it this time.

Basil Mint Pesto
Serves: 4
  • 1 oz basil (typical grocery store small package)
  • 1 oz mint (typical grocery store small package)
  • 1 clove garlic
  • 2 TB lemon juice
  • ½ cup roasted nuts
  • ¼ cup water
  • salt and pepper to taste
  1. Start with the garlic clove in the food processor. Whiz until minced. Add all other ingredients. Whiz until smooth. Scrape bowl and repeat as needed to incorporate all ingredients.
  2. Toss with pasta or roasted veg.

Any nuts will do. I happened to have a mix of pistachios, almonds, and cashews, so that’s what I used.
