Basil Hummus

This week brought the first clippings from our new basil plants. Hummus is a main ingredient  for lunch today, and I thought basil would be a tasty sub for the usual parsley. Yes!

Basil Hummus

Ingredients
  • 1½ cups garbanzos, cooked and drained
  • ⅓ cup tahini
  • ⅓ cup lemon juice
  • 2 cloves garlic
  • 2 sprigs basil
  • salt & pepper to taste
Instructions
  1. Add peeled garlic cloves to food processor. Whiz until minced.
  2. Add all other ingredients. Whiz until smooth.
