Babaganoush Meal

I love sauces and dippers. This was a fairly easy and super tasty meal to throw together. We are hooked on the puttanesca bread sticks! I was really glad that both the eggplant and garbanzos roasted and toasted in the same time at the same temp. Easy!

Ingredients
  • 2 eggplants
  • 6 garlic cloves
  • ¼ cup tahini
  • ½ cup lemon juice
  • salt & pepper to taste
Instructions
  1. Slice eggplant in half. Salt and oil. Place flesh side down on roasting pan. Also place oiled garlic cloves (unpeeled) on the pan. Bake at 400 for 40 minutes.
  2. Scoop eggplant flesh into food processor bowl. Remove garlic from skins and add to bowl. Add tahini, lemon juice, and seasoning. Whiz until smooth.

Toasted Garbanzos

Ingredients
  • 2 cups garbanzos, cooked and drained
  • 1 TB oil
  • 2 tsp or more Masala (or seasoning of choice)
  • salt & pepper to taste
Instructions
  1. Toss ingredients together. Add to roasting pan. Cook at 400 for 40 minutes.
