When the 2yo has a case of the picky pants, I can usually fall back on apple soup to satisfy him. I will admit that he didn’t eat much of this either, but he deemed it to be tasty and full of “goodness”. This attack of picky is a serious one! He is turning his nose up at tortillas, pea pods, tomatoes, cucumbers, even fruit pops! This must be a phase, and I hope it passes soon.
I’ve done so many versions of this soup. (The original was Harvest Stew.) The only must-haves are apples and vegetable stock. Other options include white beans, peas, pasta, carrots, etc.
Apple Soup

Ingredients
- 2 apples, peeled and diced
- 1 cup butternut squash cubed
- 2 celery stalks diced
- 1 cup goodness (vegetable stock)
- 1 tsp olive oil
Instructions
- Heat pot to medium. Add oil. Add celery and saute briefly. Add apple, butternut, stock, and a tiny bit of salt/pepper. Cover and simmer for approximately 15 minutes.
